Your problem looked interesting to me and I decided to do some experiments on my PC, just for self-education.
If you user account has been deleted, then:
1. Your files are not automatically deleted. (But it might happen that the same person who deleted your user account, deleted also your files.)
2. Anyway, the only way to reach your files if they still exist, is to use a username who has local administrator's privileges. Even if you will be restored in the system as a user with the same name, you will not get access to your old files! Windows will count you as another user.
So, the first question is - do YOU have local adminstrator's rights just now? If not, then your problem goes from technical to social engineering. If you are not in a personal conflict with a person who deleted you, talk to her. (Since she were able to delete your user account, she likely is a local administrator.)
Then look into the folder "C:\Documents and Settings\demouser\Local Settings\Application Data\ACD Systems\data" where "demouser" is your old username. (In fact, something similar to it, because Windows may add suffixes to that user name.) Any zip file in that folder or its subfolders is a candidate for you private folder contents. Unzip all files using your old private folder password.
In case you have the administrator rights and cannot find any folder in the described way, then your files are lost forever. (Well, the last attempt is to check the Recycle Bin, but if your files were intentionally deleted by someone, then you should not await that the Recycle Bin has not been emptied.)
