When canvas opens we get the option to create a Publication or Illustration. What difference is there upon opening a blank document in either? I note one has pages whilst the other has Sheets - no doubt other differences too. I assume there are advantages else the option wouldn't be there?

When you select Illustration, the Margins checkbox is disabled in the Properties bar. If you select Publication, Drawing Scale and GIS are disabled.
Also, with Publications, you can have facing pages for multipage documents.
